Spice up your spring with Lajina Masala

We love curry here at Frestival...and we especially love it when it’s healthy too!

Chef and founder of Lajina Masala, Lajina Leal will be part of our cookery theatre for Frestival 2020 for the second year running.

She launched her business in October, 2013 to teach home-style Indian cooking.

A self-taught home cook, Lajina’s meals are made from scratch and she has loads of tips and tricks to make healthy, but tasty, curries.

On May 16th at the Greenhous West Midlands Showground,  Lajina will be showing us how to create both gluten-free dishes, and vegan-friendly dishes.

But if you want to try it out for yourself, Lajina is running a variety of workshops starting from April so you learn how to make some delicious curries yourself.

Here are her available courses, with dishes to be confirmed.

  • April 25
  • June 13
  • July 25
  • September 12
  • October 24
  • November 28

Lajina said participants will learn to make lots of yummy Indian dishes from scratch

She said: “There’s always a good curry base, an Indian bread and rice demo as a minimum. You will share a meal with the class and take lots of dishes home to enjoy.

“Vegetarians and dietary requirements can be catered for but I must know when the booking is made.”

Lajina said she wanted to become involved with Frestival to better understand the free-from movement.

She said: “I believe customers should come first so I like to understand their dietary needs and requirements, so it was natural for me to become involved.

“For my family, I make lots of dairy free gluten free dishes. My favourite curries to cook are simple, tasty ones, especially daals (lentils) as I can stir in a salad at the end, which adds texture and makes them super healthy and tasty.”

Frestival organiser Ian Bebbington said he was delighted to welcome Lajina back to Frestival.

He said: “People loved watching Lajina cook at Frestival last year. Her workshop certainly gave me some new ideas and we can’t wait to see what she cooks up in 2020.”
All Lajina’s courses take place at Little Wenlock Village Hall from 10 am to 4pm and cost £99 per person.
